This is one of my favorite cookie recipes that dose not need chocolate but it never hurts.

Ingredients:

  • 1 cup butter softened

  • 1/2 cup white suger

  • 1/2 cup brown sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 2 cups all-purpose

  • 2 cups rolled oats

  • 1 tsp baking soda

  • 1 tsp ground cinnamon

  • 1/2 tsp salt

  • 3 medium ripe bananas (mashed)

  • 1 cup semisweet chocolate chips (optional)

Intructions:

  1. Preheat oven to 375 degrees and line a sheet with parchment or spray with nonstick spray.

  2. In a medium mixing bowl cream together the butter and sugars until light and fluffy

  3. Beat in the eggs and vanilla

  4. In a separate bowl stir together the flour, oatmeal, baking soda, cinnamon, and salt.

  5. Add the dry ingredents to the butter and sugar and beat until just combined.

  6. Mix in the mashed bananas and chocolate if wanted until well incorporated.

  7. Use a large cookie scoop or two spoons to make small to large balls out of the cookie dough.

  8. Place the balls on the cookie sheet and bake for 12 minutes or until edges are browned.
